Chicken Meatballs

YOU can make chicken meatballs.  It’s really easy!  And they’re fun to make because you get to get a little messy.

Give them a try – they’re easier than you think to make, and they are absolutely splendid to eat!  You can eat them on their own or serve them with rice or in your favorite pasta sauce.  You could bring them to a potluck too – who doesn’t love a good meatball!?

Here’s what you need to make them:

  • 1 pound of ground chicken
  • 1/2 cup dry bread crumbs (or a really big handful of croutons)
  • 1 egg
  • Dry herbs of your liking – parsley, oregano, basil, garlic, anything savoury that you like
  • Salt & pepper
  • 1/4 cup cooking oil
  • 1.4 cup white onion

Here’s how to make them:

1.  If you don’t have dry bread crumbs but you have croutons or dry-toasted bread, use a food processor to shred that bread up into crumbs (not dust).

2.  Put the ground chicken into a big mixing bowl.

3.  Add the bread crumbs to the ground chicken.

4.  Add a few good sprinkles of salt and pepper to the mix.

5.  Add some of your favorite dried herbs – a couple of pinches of each one will be enough.

6.  Dice up your white onion and add it to the mix.

7.  Crack the egg into a small bowl and mix it up with a fork.  Then add it to the meat mixture.

8.  Put a large pan on the stove and put the heat on to medium.  Pour some cooking oil in the pan, enough to very thinly cover the pan.

9.  Wash your hands thoroughly, and then use your hands to mix the meat mixture up until it’s really well-mixed.  Once it’s well-mixed, use your hands to shape little balls.  Each ball should be about an inch around.  Drop each ball into the cooking oil.  Once you’re done, wash your hands again very thoroughly.

10.  Cook the meatballs for about four minutes and then stir them around.  You want to make sure each side of the meatball gets cooked, so stir them every four minutes and make sure each part of the meatball gets cooked.

11.  Once each side of each meatball looks cooked, pick out the very biggest meatball.  Cut it in half.  If it’s cooked all the way through (it should be all brown, you should not see ANY pink!), then you’re done!

  Here’s what they cost to make (approx. 30 meatballs):

  • Ground chicken:  $5.00

  • Egg:  $0.25
  • Dry herbs:  $0.15
  • Salt & pepper:  $0.03
  • Cooking oil:  $0.25
  • White onion:  $0.25

Total cost to make:  $6.43

  Total cost per meatball: $0.21

It’s really easy to make.  Really easy.  If you can make a box of instant mac n cheese, and if you can use your oven to cook frozen meatballs, you can make this dish!

  • 1 box of instant macaroni and cheese
  • 8-10 frozen pre-cooked meatballs

3.  Once the meatballs are cooked, put them in a metal bowl.  I usually gently pull the meatballs in half so I get more little pieces of meat.

4.  Squirt them with a bunch of Sriracha sauce and stir them up.

5.  Put your mac n cheese into a bowl and top it with a few of the meteors.  Enjoy!

This is a really good dish because sometimes you get bites of classic mac n cheese, some bites have just a spicy meatball, and some bites have a bit of both – a cheesy Sriracha-infused pleasure!

Here’s what it costs to make (2 servings):

  • Instant mac n cheese mix:  $1.00
  • 8-10 frozen meatballs:  $1.50
  • Sriracha sauce:  $0.30
  • Butter/margarine:  $0.50
  • Milk:  $0.30

Sophisticated Pasta

It looks gourmet, but it’s just as easy to make as anything else.

When frozen meatballs go on sale at your grocery store, buy a box.  They come in very handy when you have surprise guests and you need to make a quick meal!  Spaghetti is one thing, but spaghetti and meatballs is so much better!

This colorful version of spaghetti and meatballs will make your guests think you’re a genius!

 This is not hard to make!  You need to be able to cook pasta, heat up sauce, and use your toaster oven to warm up meatballs.

  Here’s what you need to make Sophisticated Pasta:

  • 1/2 a package of spinach fettuccine (readily available at grocery stores and almost as cheap as regular pasta)
  • 1 jar of vodka pasta sauce (also readily available in stores, not much more expensive than regular tomato sauce)
  • about 10 frozen meatballs
  • 2 pieces of bread
  • 2 tbsps of butter
  • A bit of parmesan cheese
  • A bit of oregano

   Here’s how to make it: 

1.  Preheat your toaster oven and then cook the meatballs according to the directions on the package.  Frozen meatballs are pre-cooked so you really just need to get them all nice and hot.

2.  Put a pot of water on the stove and turn the heat up to high.

3.  Break the fettuccine noodles into halves or thirds to make less-long and easier-to-eat pieces.  Once the pot of water is boiling, cook the pasta according to the directions on the package.

4.  Put a pan on the stove on medium-low heat and pour the pasta sauce into it.  Stir it around every few minutes.

5.  Take a ceramic mug and put about 2 tbsps of butter in it.  Then add some oregano and parmesan cheese.  Add about 2 drops of water and stir it all around with a fork until it’s nice and fluffy and well-mixed.

6.  Spread the butter mixture onto the pieces of bread and set them aside.  **Be sure to leave a little bit of the butter mixture – don’t use it all on the bread!

7.   Take the meatballs out of the oven and pour them into a big bowl.  Spoon the leftover butter mixture onto them and stir it around, so that the meatballs get nice and coated in the buttery mixture.  Yum!

8.  Once the pasta is done cooking, drain it.  Once the sauce is heated up, stir it around and then put it on low heat.

9.  Put the buttered bread in the toaster oven and let it get nice and toasted.

10.  While the bread is toasting, it’s time to put together the Sophisticated Pasta.

11.  Spoon the pasta into some decorative serving bowls.

11.  Spoon the meatballs along the edges of the bowl, like in the picture below.

12.  Spoon some of the colorful vodka tomato sauce on top of the noodles.

13.  Sprinkle some parmesan cheese on top.

14.  Take the bread out of the oven.  Cut each slice in half and arrange on a dinner plate underneath the bowl of pasta.
