If you’re in need of more sandwich ideas, try one of these:

Bacon n Egg Salad

It’s delicious and you’ll love it.

This is a great recipe to make to keep in the fridge for snacks at night, for a quick delicious meal, or to take in your lunches at work.

The only cooking skill required for this is to put some eggs in some boiling water and leave them there for a bit.  You also need to be able to chop a few easy veggies and use a cheese grater.  It’s very easy!

Here’s what you need to make it:

  • 12 eggs
  • About 3 big globs of mayonnaise
  • About six or eight pieces of cooked bacon
  • Some green onion
  • A quarter of a white onion
  • Pepper
  • Lettuce
  • Bread
  • Cheese

Here’s how to make it:

1.  Hard-boil your eggsClick on the link if you need guidance on how to make hard-boiled eggs.

2.  While the eggs are cooking, get some pre-cooked bacon and cut it up.

3.  Take some green onions and chop them up.  Use as much green onion as you like!

4.  Finely dice up some white onion.  Add your diced onion to the pile of chopped green onions.

5.  Now comes the super-easy part.  Grate the hard-boiled eggs on a cheese grater (peel them first)!  Forget cutting them up yourself – the grater will do all the work for you!

9.  Add a couple of globs of mayonnaise (add it a glob at a time and stir until it’s the ‘thickness’ that you like.  If you put in too much mayonnaise, you can’t take it out!)

10.  Stir that heavenly mixture around until it’s all mixed and looks amazing.

That’s it!  You have your Bacon n Egg Salad!

Continue on to Step 11 if you wish to take Bacon n Egg Salad in your lunches.  Otherwise, keep the amazing mixture in your fridge so it’s ready for a snack or a quick meal at home.

I leave my Bacon n Egg Salad Sandwiches ‘unassembled’ until right before I eat them.  Otherwise they get soggy.  If there’s a toaster or a toaster oven at work, try toasting up your bread before you put your sandwich together.

11.  Shred up some lettuce and put it in small sandwich bags.  Make two bags’ worth of lettuce.

12.  Grate some cheese (cheddar, mozzarella, whatever you like), and put it in sandwich bags.  Make two bags’ worth of cheese.

13.  Take four pieces of bread and wrap them, two in a package, tightly with saran wrap.

14.  Take two reusable containers and fill them with Bacon n Egg Salad.  Use your best judgement to determine how much mixture you’ll need to make one delicious sandwich, and put that amount into each container.

15.  You’ll now have two days’ worth of lunches for work all ready to go!  When you get to work, simply put the sandwich together.  It’s fresh and not soggy, and your co-workers will ask you to make one for them!  (I had one of these sandwiches at work today and a co-worker wished out loud that I made her lunches for her too!)
