Garden Snack Sandwiches

These are great to make if you’re having a few friends over for a movie or something.

Here’s what you need to make Garden Snack Sandwiches

  • 1/2 cucumber
  • 1/2 fresh jalapeno
  • 12 Roma tomato
  • 1/3 brick of cream cheese (approx 3oz)
  • A small chunk of mozzarella cheese
  • A small chunk of cheddar cheese
  • 3 x 10″ tortilla wraps

Here’s how to make them:

1.  Cut up the cucumber into really small dices.

2.  Put the cream cheese in a bowl and stir it a bit to soften it up.

3.  Add the cucumber into the cream cheese and stir it until it’s well mixed.

4.  Grate the mozzarella cheese and put it in a small bowl.

5.  Finely dice the jalapeno and add it to the bowl of mozzarella cheese.  Then stir it up a bit so it’s mixed in.

6.  Grate the cheddar cheese and put it in a bowl.

7.  Slice the Roma tomatoes and leave them aside for now.

8.  Put one of the tortilla wraps on a plate and spread half of it with the cucumber/cream cheese mixture.  Then fold the other side over and give it a few pats with your hand to make sure it’s nice and flat.

9.  Take another tortilla and sprinkle the jalapeno/mozzarella mixture on half of it.  Fold it over like you did with the first one.

10.  Take the last tortilla and sprinkle one half with half of the cheddar cheese.  Place the tomato slices on top of the cheese, spreading them out over the cheese-covered half of the tortilla.  Sprinkle the rest of the cheddar cheese on top and fold it over.

11.  Cook them flat in a pan on medium heat for about 5 minutes, then flip them and cook the other side for about three minutes.  Watch the tortillas, though – they burn quickly if you overcook them!  You can probably fit two wraps in one pan at the same time.

12  Once they’re all cooked, cut each piece into quarters triangually and arrange on a serving tray.  Serve to your friends and enjoy!

  • Cucumber:  $0.60
  • Jalapeno:  $0.10
  • Roma tomato:  $0.30
  • Cream cheese:  $1.00
  • Mozzarella cheese:  $0.50
  • Cheddar cheese:  $0.50
  • Tortilla wraps:  $1.50

Total cost to make:  $4.50

Total cost per piece:   $0.38 

These tasty nibbles are great to serve warm. Three different flavors offers some variety and maye a conversation piece!
