BLT Macaroni Salad

Sometimes it’s tough deciding if you want to eat a BLT sammie or some delicious macaroni salad.  This recipe solves the problem!

Introducing BLT Macaroni Salad.  It’s awesome.

Your cooking skills need to include how to cook bacon, chop veggies, and stir things.

Here’s what you need to make BLT Macaroni Salad:

  • 8 slices of bacon, cooked (or more if you want!)
  • A few nice big globs of mayonnaise
  • Freshly cracked black pepper
  • 1/2 of an jalapeno
  • A bunch of green onions
  • 8 Roma tomatoes
  • 1/2 of a white onion
  • 1 green pepper
  • 1 package of elbow macaroni
  • 1/2 of a head of iceberg lettuce
  • A good chunk of cheese (mozzarella, cheddar, or a bit of both)

Here’s how to make it:

1.  Put a big pot of water on to boil and cook the macaroni according to the package directions.

2.  While the macaroni is cooking, do the other prep work.  Start by spooning some big mayo globs into a bowl.  You want enough mayonnaise to thoroughly coat all of the cooked pasta and veggies.  If you don’t spoon out enough mayo now, you can always add  more in later.

3.  Add some freshly cracked black pepper to the mayo.

4.  Finely dice up some jalapeno and add it to the mayo.  Then stir it all up.

5.  Wash the Roma tomatoes, cut them into quarters, remove the seeds and guts, and then slice up the quarters and put the slices in a bowl.

6.  Slice up the green onions and put the slices in a bowl.

7.  Once your pasta is done cooking, drain it but do not rinse it.  Rinsing it takes off that sticky starchy stuff.  You want that sticky starchy stuff because it will help your delicious mayonnaise to stick.  After the pasta is drained, spread it out on a baking sheet to help it cool down faster.

8.  Chop up your cooked bacon and put it all in a bowl.  Of course, you need to eat a few little pieces to make sure it’s yummy!

9.  Slice up half of a white onion and put the slices in a bowl.

10.  Slice up the green pepper and put the slices in a bowl.

11.  Chop up the iceberg lettuce and put it all in a bowl.

12.  Grate up all of your cheese and put it in a bowl.

13.  Once the macaroni is nice and cold, put half of it in a really big bowl.

14.  Now add your stuff – the mayonnaise mixture, the tomato slices, the onion slices (greeen and white), the green pepper slices, the grated cheese, and the chopped bacon.  Don’t add the chopped iceberg lettuce until just before you eat it (the lettuce will get soggy!).

15.  Now top it off with the rest of the cooked macaroni.  Then stir and stir and stir!

That’s it, you’re done!  When you’re ready to eat it, add some chopped iceberg lettuce on top and then stir it a bit.  If you want to take this tasty salad in your lunch, put it all in containers and then put the iceberg lettuce in separate bags so you can add it just before you eat!

This salad will rock your world.  It’s so good!  It’s tasty, crunchy, healthy, and filling!

  • Bacon:  $3.50
  • Mayonnaise:  $0.60
  • Black pepper: $0.02
  • Jalapeno:  $0.10
  • Green onions:  $0.50
  • 8 Roma tomatoes:  $2.00
  • 1/2 of a white onion:  $0.50
  • 1 green pepper:  $0.80
  • 1 package of elbow macaroni:  $1.50
  • 1/2 of a head of iceberg lettuce:  $1.00
  • A good chunk of cheese (mozzarella, cheddar, or a bit of both):  $2.00

 Total cost to make:  $12.52

 Total cost per serving:  $2.09

Wait a minute – a serving of this is only $2.09?  A delicious BLT sammie and a whole serving of macaroni salad, altogether, for such a cheap price?   WHOA BABY!!!!!!!
